Blackened Halibut à la Old Bay (multiple serving)
McCormick® ingredient: OLD BAY Seasoning

Ingredients:
1 1/2 lbs. Unsalted Butter (trial recipe: 8 tbsps.)
25 Halibut Fillets, 7 - 9 oz. each (1/2 to 3/4 inches thick) (trail recipe: 4 fillets)
4 1/2 cups OLD BAY Seasoning (trial recipe: 3/4 cup)

Method:

1. Heat a large cast iron skillet over very high heat for at least 10 minutes.
2. While skillet heats, melt 2 tbs. of butter per fillet in another skillet. When melted, remove from the heat.
3. Dip each fillet into the melted butter, coat both sides.
4. Place OLD BAY Seasoning in a shallow pan, dip each butter coated fillet in the OLD BAY seasoning, coat well.
5. Place each fillet in the hot skillet. Cook uncovered over high heat until the underside of the fillet looks charred, about 2 minutes. Turn the fillet over and repeat the process.
6. Keep the cooked fillets hot on a warming tray while cooking the rest.
7. To serve, place each fillet on a plate with 1 tbsp. of butter and allow the butter to melt.
